Some say it's the water, or the way the curd is sliced prior to cooking. It's even been suggested we have a secret ingredient. Our best guess would be it's the expertise of our mozzarella makers, knowing exactly when the curd is ready to be stretched and shaped into the familiar Braids or "Treccia".
